做法:洗净(jìng )宰好(hǎo )鲫鱼,洗净(jìng )淮山和薏米。用清(qīng )水把(bǎ )陈皮泡软(ruǎn ),拍(pāi )裂一小块姜(jiāng ),热锅,用(yòng )姜块在锅(guō )上(shàng )擦(cā )一遍(biàn ),放两(liǎng )勺油,待油六成(chéng )热下鱼,煎至微黄(huáng )。煮沸瓦(wǎ )煲里的清水,放(fàng )入(rù )煎(jiān )煮好(hǎo )的鲫鱼和其他材(cái )料(liào ),武火(huǒ )煮(zhǔ )沸(fèi ),转中小火煲(bāo )一个半小(xiǎo )时(shí ),下盐调(diào )味即(jí )可品(pǐn )尝。
