做(zuò )法:春(chūn )笋切成(chéng )片(piàn )后加少许盐捞出后用清水(shuǐ )浸(jìn )泡,生姜切片,葱(cōng )切(qiē )成段。锅烧(shāo )热,倒(dǎo )入(rù )2勺油,放入生姜、春笋(sǔn )、牛(niú )肉片、葱(cōng )段翻炒1分钟左右。再(zài )加入生(shēng )抽(chōu )、老抽、蚝油翻炒均(jun1 )匀(yún ),加入少量清(qīng )水半掩住春(chūn )笋,盖(gài )上锅盖大火(huǒ )煮开后转中火。煮(zhǔ )到(dào )水(shuǐ )快熬干的时(shí )候(hòu )加入盐,翻炒(chǎo )均(jun1 )匀(yún )稍收汁(zhī )时盖上(shàng )锅盖焖。
