做(zuò )法(fǎ ):洗(xǐ )净宰好(hǎo )鲫(jì )鱼,洗(xǐ )净淮山和薏米。用(yòng )清水把(bǎ )陈皮泡软,拍(pāi )裂一小块姜,热锅,用(yòng )姜块在锅上擦一遍(biàn ),放两(liǎng )勺油,待(dài )油(yóu )六成(chéng )热下鱼,煎至微黄。煮(zhǔ )沸(fèi )瓦煲里(lǐ )的清水,放入煎煮好的鲫鱼(yú )和其他(tā )材料,武火煮(zhǔ )沸(fèi ),转中小火(huǒ )煲(bāo )一(yī )个半小(xiǎo )时(shí ),下盐(yán )调(diào )味即可(kě )品(pǐn )尝。
