做法(fǎ ):洗净(jìng )宰(zǎi )好鲫鱼,洗净淮(huái )山和薏米。用清水把陈皮泡软,拍(pāi )裂(liè )一小块姜,热锅(guō ),用(yòng )姜块在锅上擦(cā )一(yī )遍(biàn ),放两(liǎng )勺油,待油六(liù )成热下鱼,煎(jiān )至微黄。煮(zhǔ )沸瓦煲里的清水(shuǐ ),放(fàng )入煎(jiān )煮(zhǔ )好的(de )鲫鱼(yú )和其(qí )他材料,武(wǔ )火(huǒ )煮(zhǔ )沸,转中(zhōng )小火煲一个半(bàn )小时,下盐调(diào )味(wèi )即可品尝。
