做法:洗(xǐ )净宰好鲫鱼,洗净淮山(shān )和薏(yì )米(mǐ )。用清水把陈皮(pí )泡软,拍(pāi )裂(liè )一小块姜,热锅(guō ),用(yòng )姜(jiāng )块在(zài )锅上擦一遍,放两勺油,待油(yóu )六成热下鱼,煎(jiān )至微(wēi )黄(huáng )。煮沸瓦煲里的清(qīng )水(shuǐ ),放入煎煮好的(de )鲫鱼(yú )和其(qí )他材料(liào ),武火煮(zhǔ )沸,转(zhuǎn )中小火(huǒ )煲(bāo )一个半小时,下盐调(diào )味(wèi )即(jí )可品(pǐn )尝。
