做法:洗净宰(zǎi )好鲫鱼,洗净(jìng )淮(huái )山和(hé )薏米(mǐ )。用清水(shuǐ )把陈(chén )皮(pí )泡软(ruǎn ),拍裂一(yī )小(xiǎo )块姜,热锅,用姜块在(zài )锅上擦(cā )一遍(biàn ),放(fàng )两勺油,待油六成热下鱼,煎(jiān )至微(wēi )黄(huáng )。煮(zhǔ )沸瓦(wǎ )煲里的清(qīng )水,放入煎煮(zhǔ )好(hǎo )的鲫(jì )鱼(yú )和其他材料,武火煮(zhǔ )沸(fèi ),转中小(xiǎo )火煲一个(gè )半小时,下盐(yán )调(diào )味即可品尝。
