做法(fǎ ):洗净(jìng )宰(zǎi )好(hǎo )鲫(jì )鱼(yú ),洗净淮(huái )山和薏米。用清(qīng )水(shuǐ )把陈皮(pí )泡软,拍(pāi )裂一小块姜(jiāng ),热锅,用姜(jiāng )块在(zài )锅上擦一遍(biàn ),放两勺油(yóu ),待(dài )油六成热下(xià )鱼(yú ),煎(jiān )至微黄(huáng )。煮沸瓦煲里的清水,放入煎煮好的鲫鱼(yú )和其(qí )他材料(liào ),武火煮(zhǔ )沸,转(zhuǎn )中小(xiǎo )火(huǒ )煲一个半小时,下盐(yán )调(diào )味(wèi )即(jí )可品尝。
