做法:洗净宰好鲫(jì )鱼,洗(xǐ )净(jìng )淮(huái )山和薏米。用清水(shuǐ )把陈皮泡软,拍裂一小块姜,热锅(guō ),用姜(jiāng )块(kuài )在(zài )锅上擦一遍,放(fàng )两勺油,待油六成热(rè )下鱼(yú ),煎至微黄。煮(zhǔ )沸(fèi )瓦煲(bāo )里(lǐ )的清水,放入(rù )煎煮好的(de )鲫鱼和(hé )其他材(cái )料(liào ),武火煮沸,转(zhuǎn )中(zhōng )小火煲一(yī )个半小(xiǎo )时(shí ),下盐(yán )调(diào )味即(jí )可品(pǐn )尝。
