做法:洗净宰好(hǎo )鲫鱼,洗净淮(huái )山和(hé )薏(yì )米。用清水把(bǎ )陈皮(pí )泡软,拍(pāi )裂一小(xiǎo )块姜,热(rè )锅,用姜块在锅(guō )上(shàng )擦一遍,放两勺油,待油六成热(rè )下鱼(yú ),煎至微(wēi )黄(huáng )。煮沸瓦煲(bāo )里的清(qīng )水,放入煎煮好(hǎo )的(de )鲫鱼和(hé )其他(tā )材料,武(wǔ )火(huǒ )煮(zhǔ )沸,转中小火(huǒ )煲(bāo )一个半(bàn )小时(shí ),下盐调味(wèi )即可品尝。
