做法(fǎ ):洗净宰(zǎi )好鲫(jì )鱼,洗净淮(huái )山和薏米(mǐ )。用清(qīng )水(shuǐ )把陈(chén )皮泡软,拍裂一小(xiǎo )块姜,热锅,用(yòng )姜块(kuài )在锅(guō )上(shàng )擦一遍,放(fàng )两(liǎng )勺油,待油六成热(rè )下(xià )鱼,煎至微黄(huáng )。煮沸瓦煲里的清水,放入(rù )煎(jiān )煮好(hǎo )的鲫鱼和其(qí )他材料,武(wǔ )火煮(zhǔ )沸,转(zhuǎn )中小火煲一个半小时,下盐调味即(jí )可(kě )品(pǐn )尝(cháng )。
