做(zuò )法:洗净宰好鲫鱼(yú ),洗净淮(huái )山和薏(yì )米(mǐ )。用清(qīng )水把(bǎ )陈皮(pí )泡软,拍裂一小(xiǎo )块(kuài )姜,热锅,用姜块在锅上擦(cā )一遍(biàn ),放两勺油,待(dài )油(yóu )六成(chéng )热下鱼(yú ),煎至微黄。煮沸瓦煲里(lǐ )的(de )清水(shuǐ ),放(fàng )入煎煮好的鲫(jì )鱼和其(qí )他(tā )材料(liào ),武火煮沸,转中小(xiǎo )火煲一个半小(xiǎo )时,下盐(yán )调(diào )味即可品(pǐn )尝(cháng )。
