做(zuò )法:洗净(jìng )宰好(hǎo )鲫鱼,洗净淮山和薏(yì )米。用清水(shuǐ )把陈皮泡软,拍裂(liè )一小块姜(jiāng ),热锅(guō ),用姜(jiāng )块(kuài )在锅上擦一遍(biàn ),放(fàng )两勺油,待油六成热(rè )下鱼,煎至(zhì )微(wēi )黄(huáng )。煮(zhǔ )沸瓦煲里(lǐ )的清水,放(fàng )入煎(jiān )煮好的鲫鱼和其他材(cái )料,武火(huǒ )煮(zhǔ )沸,转中(zhōng )小火(huǒ )煲一(yī )个半(bàn )小时,下盐调味(wèi )即(jí )可品尝。
